Of course you could reverse the color scheme and serve Black pasta with Orange pumpkin sauce. Not impossible according to one of my cookbooks which gives a recipe for dark chocolate pasta. Halloween main dish Orange and Black pasta make one recipe of either pumpkin pasta or Tomato pasta recipes follow depending on which ingredients you have available. Both recipes produce Orange coloured pasta. The pumpkin pasta will have a Subtle pumpkin flavor but the Tomato pasta will taste like Standard White pasta in Spile of the Tomato paste added to the dough. In All of the following pasta recipes the function of the Tomato paste is to color the pasta Orange while the pasta is drying just before you Cook it prepare the following Garnish 6 Tablespoons butter at room temperature i cup freshly graded Parmesan cheese freshly ground Black Pepper in cups coarsely chopped Black olives put 1 Tablespoon of the butter into each of 6 shallow soup plates and keep the plates warm in an oven on the lowest temperature setting. As soon As the Orange coloured noodles have cooked and drained Divide them evenly among the soup plates quickly and gently toss the pasta m each bowl with the softened butter. Sprinkle two rounded Tablespoons of grated Parmesan cheese and a Little freshly ground Black Pepper on lop of each serving unpacked pumpkin pasta and you thought they were Only Good for pit and Jack of lanterns. Of pasta and toss again to mix the ingredients. , add % cup of Choppy to Black olives to each Bow of pasta and toss lightly to mix the olives and pasta. Serve immediately As a first course pasta course or main dish. Makes it Servings. Pumpkin pasta 3 cups unbleached White hour 1 Large egg Al room temperature % cup pumpkin Puree unsweetened a cup Tomato paste 1 Tablespoon vegetable Oil i Teaspoon Salt Combine ill the ingredients in the Container of a food processor filled with the Metal culling Blade. Process for about 2 minutes or until the dough pupils away from the sides of the Container and begins to form a will Divide the dough into four equal parts and put Al but one of them into a plastic bag to keep them from drying Oul. Roll one  of dough through the  machine with the rollers Sot on the widest setting. Lightly Dusl Wilh flour if the dough seems too Sticky. Fold the dough into Thirtle across the Width and Roll it five More limes through the pasta machine still on the widest setting folding Inlo thirds Afler each rolling until the dough is smooth and pliable. After the final rolling fold the dough Inlo thirds and place it in another plastic bag to keep it from drying out. Repeat this process with the remaining three balls of dough. Take each portion of rolled dough and put it through the pasta machine rollers six times each time reducing the space Between the rollers by one notch thus causing the dough to become thinner and longer. Do not fold the dough into thirds Between each rolling. After the fourth rolling Cut the dough in half crosswise to make it easier to handle when you finish rolling each portion of dough place it Flat on Long sheets of lightly floured Wax paper. You will have a total of eight Long Flat pieces of dough each about 4 a inches wideand12inches Long. Lei the rolled dough re for 15 minutes after you finish rolling the Las piece. Using the pasta machine tit each piece of rolled dough Lengthwise Inlow Inch wide noodles. Lay the noodles on clean Kitchen towels or hang them on a wooden drying rack or suspend them from a Broom handle supported by two chairs. Let them dry for 15 to 30 minutes before cooking them or let them dry completely 6 to 8 hours then store them in an airtight Container until needed. To Cook the noodles fill a six quart Stock pot with four quarts of cold water. Add one Tablespoon of Salt and 1 Tablespoon of vegetable Oil. Bring the water to a full boil Over High heat. Drop in the noodles and stir gently. Cook fresh noodles for about 1 to 2 minutes until they Are just barely done Aldene. Tender but not too soft. Cook dried noodles 3 to 4 minutes until they Are Aldene. Immediately Pouf All the contents of the pan into a colander and shake it gently to Drain the noodles. Garnish As desired and serve hot. Makes 6 Servings of noodles. Note this pasta dough also makes excellent Orange coloured Ravioli stuffed with chopped Lurkey mixed with a Little Nutmeg and Black Pepper. Tomato pasta 3 cups unbleached White flour 4 Large eggs at room temperature i cup Tomato piste 2 Tablespoons vegetable Oil i Teaspoon following the instructions for the preparation and cooking of pumpkin pasta halloween dessert pasta with chocolate sauce Sweet Orange pasta recipe follows chocolate fudge sauce recipe follows a cup Orange liqueur 1 Small can 11 ounces mandarin Orange slices optional make Sweet Orange pasta while the noodles me drying make chocolate fudge sauce. Pui one Tablespoon of Orange liqueur into each of eight individual shallow dessert bowls. As soon As the Orange noodles have cooked and drained Divide them evenly among the eight bowls. Using two Forks quickly toss the pasta in each bowl Wilh the Orange liqueur. Drizzle iwo Tablespoons of warm chocolate fudge sauce Over the pasta and Garnish the lop Wilh a few sections of mandarin oranges if desired. Serve immediately. Makes tight Servings. Sweet Orange pasta one 6-ounce can of Frozen Orange Juke concentrate thawed and not diluted a cup Tomato paste finely graded Peel of one Orange 1 Large egg Yolk Al room temperature 3 cups unbleached White flour Combine the Orange juice concentrate Tomalo paste and grated Orange Peel in a Small bowl. Mix Well. Put into the Container of a food processor fitted with the Metal rutting Blad Eadd the egg Yolk and flour and process for 1 to 2 minutes or until the dough pulls away from the sides of the Container. Follow the instructions for the preparation and cooking of pumpkin pasta chocolate fudge sauce 4 ounces 4 squares unsweetened Balling chocolate one 13-ounce can in. Cups evaporated milk 4 cups confectioners sugar i Teaspoon Salt 2 Tablespoons butter v4 cup Orange liqueur Combine the chocolate evaporated milk confectioners sugar and Salt in the top of a double boiler. Cook Over not in rapidly boiling water stirring frequently until All the ingredients Are thoroughly blended and no More specks of chocolate can be seen in the mixture. Remove from heal and sir in the butter and Orange liqueur. Beat Wilh an electric mixer on Low Speed until All the ingredient Are Well combined. Serve either warm or cold. Keep leftover chocolate sauce in an airtight Container in the refrigerator for up to one month. Makes 2v4 cups
