   European Stars and Stripes (Newspaper) - February 23, 1990, Darmstadt, Hesse                                6 cloves garlic smashed peeled and minced 1 Small onion about 4 ounces peeled and coarsely chopped 1 medium Green Bell Pepper about 6 ounces stemmed seeded and Cut into 1-Inch piece 1 Large Granny Smith Apple about 8 ounces peeled cored and Cut into 1-Inch pieces 2 pounds Large shrimp peeled and devel Ned it cup fish Broth or Chicken Broth 1 Tablespoon grated fresh Ginger 5 ounces Frozen baby Lima Beans defrosted in a Sieve under hot running water 1 it Teaspoons hot Pepper sauce 2 Tablespoons freshly squeezed Lime juice Salt to taste. If making both the Pilaf and the Curry in the microwave oven make the Pilaf ahead. Stop cooking the Pilaf two minutes Short of the final Lime and then reheat for four minutes. Most curries can be cooked ahead and then be reheated but that will not work with the Chicken Curry which contains papaya. The Papain an enzyme in papaya that is used As a meal Tenderizer will make the Chicken Mushy and powdery. Green shrimp Curry preparation time 20 minutes cooking time 19 minutes w pounds fresh spinach stemmed washed and dried about 8 cups loosely packed 1 cup loosely packed coriander leaves i cup loosely packed Parsley leaves 1 Tablespoon vegetable Oil 2 Teaspoon fennel seeds 4 Teaspoon whole cumin seeds 2 Teaspoons whole yellow Mustard seeds exotic to flutes Al Sill place spinach coriander and Parsley in the work bowl of a food processor and chop finely Reserve Combine Oil and spices in a 5-quart casserole with tightly Ming lid Cook uncovered at 100 Percon Power in a 650 to 700 Watt oven for 3 minutes remove from oven and stir in garlic and onion cover with lid return to oven and Cook at 1 00 percent Power for 4 minutes remove from oven and uncover stir in Pepper and Apple re cover and Cook at 100 percent Power for 3 minutes. Remove from oven and uncover. Push vegetables to Center of dish place about half of the reserved spinach around the inside Edge of dish arrange shrimp in a single layer Over spinach and cover with remaining spinach. Pour Over the Broth re cover with lid Cook at 100 percent Power for 6 minutes. Remove from oven and uncover stir in grated Ginger. Scatter Lima Beans Over re cover and Cook Al 100 percent Power for 3 minutes remove from oven and uncover. Stir in Pepper sauce Lime juice and Salt to taste. Low wattage variation Cook As above in a 400 to 500-Watt oven in step 2 for 5 minutes Cook As in step 3 for 6 minutes. Cook As in step 4 for 6 minutes arrange spinach and shrimp As in step 5 and Cook for 10 minutes Cook As in step 6 for 5 minutes. Finish recipe As above yield 8 Servings Chicken Curry preparation Lime 10 minutes cooking time 10 minutes and 30 seconds 2 to 3 Tablespoons Curry powder i Teaspoon vegetable Oil 1 Largo yellow onion about 8 ounces peeled and roughly chopped about 2 cups 5 Clovea garlic smashed peeled and sliced v cup Chicken Broth 1 Green papaya under Ripe peeled seeded and Cut into 1-Inch pieces about 3 cups 3 whole Chicken breasts skinned boned split and Cut into 1-Inch pieces i cup Golden raisins 1 8-ounce Container Plain nonfat Yogurt /4 cup freshly squeezed Lemon juice a a Tablespoons peeled and grated fresh Ginger Salt to taste. Mix Curry powder and Oil in an Oval dish 13 by 9 by 2 inches to form a paste. Cook uncovered in a 650 to 700-Watt oven at 100 percent Power for 1 minute and 30 seconds. Remove from oven and stir in onion and garlic. Return to oven and Cook uncovered at 100 percent Power for 3 minutes remove from oven and stir in Chicken Broth papaya. Continued on Page 14 Friday.
