Fettuccine with asparagus and Ginger Cream sauce preparation 10 minutes cooking time 10 minutes 3 quarts water 1 Pound asparagus 1 to 2 Tablespoons Olive Oil 3 Large shallots minced 2 Tablespoons coarsely grated Ginger a cup reduced fat Ricotta cheese at room temperature 3a cup Plain nonfat Yogurt at room temperature 6 ounces fresh fettuccine a cup coarsely grated Parmesan cheese freshly ground Black Pepper to taste.
