   European Stars And Stripes (Newspaper) - August 23, 1988, Darmstadt, Hesse                                By Pierre Franey new York times n recent months i have been surprised at How often cabbage Long scorned As a second class vegetable has appeared on the menus of some of the finest and most luxurious restaurants both in the United states and in France. Now cabbage is being stuffed with foie gras or with fish and truffles. Of course cabbage does not have to be All that elegant to be Good. A dish that met with considerable favor when i served it recently was a version of an old fashioned combination cabbage Flavoured with Caraway seeds. I gave the cabbage a touch More body by simmering it Only briefly with a Little heavy Cream. The cabbage made a Nice accompaniment for a main dish of fish and shrimp cooked with potatoes and Flavoured with ground turmeric and thread Saffron. The Saffron imparts a very delicate flavor but it is quite expensive. In this recipe the Saffron can be eliminated without wholly changing the nature of the dish. I made this recipe with homemade fish Broth but it May also be made with bottled Clam juice which is widely available in grocery stores. Fish and shrimp in potato sauce 1 potato about a Pound 1 onion about 1/� Pound peeled 6 jumbo shrimp about 1/z Pound 11/4 pounds skinless Boneless tilefish weakfish red Shapper or sea Bass 1 Tablespoon Olive Oil 1 finely minced garlic Viz Teaspoon thread Saffron 1/4 Teaspoon ground turmeric 1 Bay Leaf v4 Teaspoon hot red Pepper flakes dried 1/2 cup dry White wine 1va cups fish Broth or bottled Clam juice Salt to taste if desired freshly ground Pepper to taste 2 Tablespoons butter. Peel the potato. Cut it in half Lengthwise. Place the halves on a Flat surface and Cut into very thin slices. There should be about 1 cup. Place the slices in cold water and set aside. Cut the onion in half crosswise. Place the halves Cut Side Down on a Flat surface and Cut into thin slices. There should be about % cup. Peel and Devin the shrimp. Set aside. Cut the fish into 2-Inch pieces. Set aside. Drain the potatoes. Heat the Oil in a Saucepan and add the onions. Cook until wilted. Add the potatoes garlic Saffron turmeric Bay Leaf red Pepper flakes wine fish Broth Salt and Pepper to taste. Bring to a boil and Cook stirring often about 10 minutes. Put the mixture into the Container of a food processor and blend thoroughly. This May have to be done in two batches depending on the size of the processor. There should be about 21/2 cups. Put the sauce in a Saucepan and bring to a boil. Cook Down stirring often about 5 minutes or until reduced to 2 cups. Heat the butter in a Large Skillet and add the fish pieces and shrimp. Cook turning the pieces occasionally about 2 minutes. Pour the sauce Over All and stir to blend. Cook about 2 minutes. Do not  4 Servings. Fish Broth 1 Pound fish Bones 2 cups of water Salt to taste if desired Cut the fish Bones into pieces and put them in a Kettle. Add the water and Salt and bring to a boil. Cook 20 minutes and then Strain discarding the Bones. Yield about 1 cup. Cabbage with Caraway seeds 1 Small cabbage about 11/z pounds 1 cup fresh or canned Chicken Broth Viz Teaspoon Caraway seeds Salt to taste if desired 1 onion thinly sliced about 1 cup 1/2 cup heavy Cream freshly ground Pepper to taste 1/4 cup finely chopped Parsley pull off and discard the outer leaves of the cabbage. Cut the cabbage into quarters Cut out and discard the cores. Cut the cabbage into Fine shreds. There should be about 8 cups. Put the cabbage shreds in a casserole and add the Broth. Sprinkle with the Caraway seeds and Salt and stir. Cover closely and Cook 5 minutes. Add the Cream Salt and Pepper and stir. Cover and Cook 5 minutes longer. Sprinkle with Parsley and serve. Yield 4 Servings the curious is Vitamin c completely destroyed when boiling water is poured Over it does it do any Good to drink hot water and Lemon juice for a cold other than just the benefits of drinking something hot Nancy Sparks Apo . / bought supplements containing both Calcium and Vitamin c in one Pill the idea being that Vitamin c increases the body s ability to absorb and utilize Calcium Carbonate. Concerning drinking hot water and Lemon juice Cameron informs us that the amount of Vitamin c in Lemon juice is therapeutically insignificant. A publication put out by Best foods producers of mazola Corn Oil advises that when solid shortening must be Cut in or creamed with other ingredients direct replacement with Oil rarely works Well. It is better to use recipes especially developed for  for some baking recipes especially developed for oils i would recommend that you Send away for a Booklet put out by Best foods called a diet for the Young at heart. It contains a recipe for a dark chocolate cake Corn bread a Salt free wheat bread bran muffins and Ginger snaps along with other dishes using Oil instead of butter or Margarine.
