We do not consider Lead Crystal if used in a Normal manner As being a health Hazard says . Mitchell of the food and drug administration s Center for food safety and applied nutrition. However Mitchell adds there possibly could be some leaching from a Goblet containing wine or juice but we do not expect at a hazardous level. At this time we do not have regulations or guidelines on Lead Gilbert Stoewsand a professor of toxicology at Cornell University tells us that Corning Glass has done quite a bit of work on the possibility of acidic solutions such As wine or juice releasing Lead from their Steuben Crystal Glass. But even with solutions that Are More acidic than wine Only very tiny traces were released. These tiny traces Are considered to be insignificant from a toxicological standpoint. It would be inadvisable however to let salad dressing sit around for Days in such Lead Crystal. It May interest you to know says Stoewsand that Only about 8 percent of Lead is absorbed in adults As compared to about 40 percent in Erma Bombeck when i fantasized about coming Home from the women s revolution i always visualized Tara. A few will set a Cereal Box on the table. Beyond that most men will not Cross Over the line. They have no curiosity about How to turn on the stove. They have never seen a naked Chicken. They see no adventure in tearing along a dotted line. My theory is that it s not so much a Macho thing As it is fear. I think to them a Kitchen is the Temple of doom. All those whirling Blades open fires arsenals of knives boiling pots and dinging Bells make pm crazy. They re Flat out intimidated by them in action. So they act like they re above them. They la fix a disposal but they won t feed one. They la unstick ice cube trays from the Freezer but they won t fill them with water. They la Sharpen knives but they won t use them. As i have often told my husband i m replaceable cooked meats should be cooled within one to two hours after cooking then covered or wrapped to prevent drying and stored in the refrigerator is contrary to any advice i be seen from reputable Public health officials. Several species of bacteria notably Clostridium per Ringens and Bacillus cereus form spores that survive the cooking process and germinate As foods Cool. Allowing any potentially hazardous foods to remain at room temperature longer than necessary is contraindicated. Even several hours prolongs the time that it will be at a temperature where bacterial multiplication can occur. Better advice would have been meat and any other moist High protein leftovers should immediately be refrigerated and should never be left out at room temperature to Cool Down this will prevent any spores that survive cooking or any other bacteria added during handling from having time to multiply to Levels which could cause disease. If an individual is concerned about condensation then the food can be stored uncovered for an hour and then covered to prevent drying. 1 one of the primary causes of food borne illness is failure to refrigerate foods. In England disease caused by c. Per Ringens is associated with foods left out at room temperature in pubs and is reported to be quite a this was brought to my attention by several other readers whose letters appeared in this column but i think your advice bears repeating for any readers who might have missed it. Thank you. To Sonia Heinze in care of the you know. Anyone who can read can get a meal to the table. There s nothing to it. Cooking in t a Talent.
