Bartholomew Gosnold an English explorer who sailed South from Nova Scotia along the coast of new England in 1602, was amazed by the abundance of cod in those Waters and decided to name a curved Arm of land there Cape cod. There Are As Many variations on new England codfish cakes As there Are new England Cooks. I recently came up with a version that is simple and delicious. Begin with skinless Boneless fresh cod files seasoned liberally with Salt and Pepper. Steam them for about 5 minutes for 11/2 pounds. The next step is to Peel russet potatoes and boil them with some onions. I use russet potatoes because they have a Low water Content and tend to bind better than other types. Mash the mixture but do not whip it into a Puree. It should have a Semi rough texture. Flake the cod and add it to the potato mixture with Mustard Worcestershire sauce and grated onions. Saute the codfish cakes in a non stick Skillet using just a Little Oil. The traditional accompaniment is tartar sauce which i make with Liberal amounts of Corni Chons Capers and onions to give it a Zippy flavor.
