I can eat Broccoli and kale and bulgur and Rice i can make meat a condiment and eat bread without butter but done to take away chocolate. Maybe a Well balanced person would eat just a bit once in a while calmly going to the cupboard and slicing off a miserly Little Sliver and carefully wrapping the remainder to be eaten at some future time but Well balanced people probably Don t need chocolate in the first place. I need chocolate often and i need it in Quantity. The consequence of that is far too Clear too much fat outside and too much fat inside threatening to cause cancer and heart disease and who knows what else. Hence the quest Lor a Low fat chocolate that would actually be satisfying. The chocolate pundits chocolate unlike cauliflower has pundit say very few people really want a Low lat chocolate they argue that the current Frame of mind in America is something like this eat very carefully during the main part of the meal and then Heap on the Reward with a big gooey Latty dessert. That s Why Chocolatier Magazine recently discontinued its Tow fat dessert column Quot it Wasny to very popular Quot said Tim Moriarty the managing editor. Its not hard to understand Why there is Little interest in Low fat desserts. Most Are not Worth the work a perfect Fig is far More delicious than some Truit concoction that takes two hours to make and looks like something a prom Queen would Wear. Nevertheless with Low fat cookbooks hitting the shelves at the rate of one or two a week a number of chocolate recipes Are turning up Many Are for Light desserts like crepes or Angel food cake to someone whose Ideal dessert is a flour less chocolate cake or heavy bitter hot fudge sauce Over Rich Vanilla ice Cream or a Brownie so Pudgy that it leaves a residue on the Teeth for an embarrassingly Long period those lightweight desserts Are like sniffing air that. Has a faint smell of chocolate. But there were five recipes that seemed Worth trying. All were for cakes and sauces. Nowhere did i find an appealing Brownie recipe. Cooking Low fat chocolate desserts Means using unsweetened Cocoa like Hershey or Droste stay away from solid chocolate whether Sweet milk semisweet or unsweetened because each ounce has about 10 Grams of fat Cocoa however has had much of the fat pressed out of it an ounce has Only three Grams of fat although the proportions differ most chocolate sauce recipes rely on sugar Cocoa cornstarch and either fresh or evaporated skim milk the first recipe i tried was a disaster after to minutes of stirring the sauce still was t thickening frustrated. I put in More cornstarch the sauce quickly reached an appealing consistency for one Brief moment it was delicious it reminded me of a childhood dessert hot chocolate pudding poured Over a warm yellow cake but then it got thicker. And thicker the cornstarch grew Umpier. When i threw it out the sauce landed with a thud in the garbage. The next sauce actually worked its proportions were More accurate. It approximated Many of the commercial chocolate sauces served in restaurants. But it Wasny to Good enough to eat out of the refrigerator in the Middle of the night with my fingers. But the next one was. From Low fat and Loving it Warner books inc., 1991this recipe dispensed with the cornstarch and instead used Buttermilk which created a slightly sour slightly bitter and slightly Sweet sauce with a much More appealing texture. The recipe called for nonfat Buttermilk a cultured milk product that tastes similar to Yogurt but t was Only Able to find the Low lat variety if nonfat Buttermilk is used the recipe has one Gram of fat per Tablespoon a hot fudge sauce made from bittersweet cooking chocolate and Cream would have about 10 times As much fat. Whether with Low fat or nonfat Buttermilk the sauce would be a perfectly health dessert served Over a nonfat Vanilla Frozen Yogurt. On to the cakes. One a pudding like concoction used flour sugar Cocoa skim milk an egg and Coffee. It had a great consistency. Some of my tasters even liked the taste. But i found a funny aftertaste produced i think by the presence of Coffee and Cocoa without the mediating influence of fat i decided to try a conventional cake rom the eating Well Cookbook a collection o recipes from the Magazine by the same name published this year by Camden House publishing inc. It turned out perfectly. Its taste was not particularly Strong but you could Tell it was chocolate the texture was neither Light nor heavy it would be Good with the Buttermilk sauce lightly spooned Over it As an icing or with a sprinkling of confectioners sugar readers action Lin Beauty and the beast on the cafes circuit it a when will the new Disney movie.
