Chili powder Pinch of cumin shortening for frying 12 tortillas lettuce 1 medium onion 1/2 in. Cheddar Chees Chili sauce chop Large onion Fine crush or Mash garlic then Fry both in melted shortening until Golden. Stir in the ground beef Salt Chili powder cumin and Cook until meat is nicely browned. In another Skillet add. Enough shortening to make �/2 Inch Mel Ted fat. Heat. Add tortillas one at a time. As soon As the. Tortilla is Limp almost immediately fold in half with tongs and hold until almost Crisp. Remove and Drain on paper towels. Shred lettuce chop medium onion Fine and grate the cheese. Fill first with the meat sauce mixture then the chopped onion grated. Cheese and sauce. Top with shredded let Tuce. Makes 12 tacos. Chili sauce 3 Tbs. Fat 2 Tbs. Flour 1 Clove garlic chopped 1/2 cup Chili powder 1 tsp. Salt 2 cups hot water melt fat add flour and garlic. Brown Well. Add Chili powder and Salt then blend. Slowly add water. Cook until thick. Enchiladas Fry tortillas in i/2 Inch hot fat. Place a Fried Tortilla on a plate Sprinkle with grated Chedar cheese and chopped onion. Cover with Chili sauce. Place an other Tortilla on top. Repeat with cheese and onion. Pour Chili sauce Over top. Three layers May be used if desired. A Fried egg May be served on top. Bake in preheated oven 350 f until cheese melts and enchiladas Are hot. For rolled enchiladas fill half of the Tortilla with grated cheese and onion Cut. Into Small pieces. A cooked meat such As Chicken or sausage can be used As a fill ing. Add Chili sauce. Fold the Tortilla Over filling and turn ends under. Chili verde con ques co dried Green Chili is Best for this recipe but canned Chili May also be used. Use one cup canned Green Chili or its equivalent of dry chillies that have been soaked in water.3 Tbs. Fat 3 Tbs. Onion chopped 1 Clove garlic chopped 1 cup canned Green Chili 1 cup grated cheese 1 tsp. Salt Fry onion and garlic in fat. Add coarsely chopped Green Chili and grated cheese. Add Salt. Cook Over slow flame until cheese is melted. White flour tortillas 2 cups flour 1 tsp. Baking powder 1 Tbs. Shortening or Bacon drippings preheat Pancake griddle. Mix ingredients together with just enough warm water to make dough that can be rolled out. Roll out to make thin 8-Inch circles. Cook on griddle three or four minutes on each Side. Mexican chocolate1/2 cup Cocoa 1 cup sugar 21/2 tips. Allspice 21/2 tips. Nutmeg 14 tsp. Salt 2qts. Milk 1 tsp. Cinnamon Combine All ingredients except milk in a three quart mixing bowl or Large Pitcher. Heat the milk until almost boiling. Pour the hot milk Over the dry ingredients stirring constantly with wire whip or rotary beater. Serve at once. Approximately 10 Servings. Biscoe Foltos 1 cup sugar 2 cups shortening 1 tsp. Anise seed 2 eggs 6 cups sifted flour 1 Tbs. Baking powder 1 tsp. Salt % cup water Cream shortening thoroughly add sugar and Anise seed. Beat eggs and add to shortening mixture. Blend until Light and Fluffy. Sift flour with baking powder Salt and add to first mixture. Add water and knead until Well mixed. Roll half Inch thick and Cut into fancy shapes. Sprinkle top of each cookie with a mixture of sugar and cinnamon. 1 tsp. Cinnamon Tol /2 cup sugar. Bake in a moderate oven 350 f for 10 to 15 minutes or until slightly Brown. Makes five dozen Cook ies. Tomato Chili sauce 2 Small onions 1 Clove garlic 2 Tbs. Olive Oil 1 Tbs. Flour 14 cup Chili powder /4 tsp. Oregano % tsp. Ground cumin 1 tsp Salt 1 cup Tomato Puree water chop onions very Fine should equal about l/2 cup. Crush or Mash garlic. Heat Oil in a Saucepan stir in onion and garlic and Cook until Golden. Mix remaining ingredients As smoothly As pos sible. Cook Over Low flame for 10 min utes. Add enough water to mixture to give sauce consistency. Makes about on pint. Guacamole salad 1 Small onion 1 Tomato 21/2 tips. Salt6 avocados peeled 2 tips. Lemon juice 2 Tbs. Mayonnaise 1 tsp. Salad Oil 1 drop hot sauce chop onion Tomato and Avocado in a bowl. Add remaining ingredients. Blend together serve in bowl or on salad greens. Makes 8 Servings. Cala Lacitas con Chili verde 4 Tbs. Fat 1 medium summer Squash diced14 cup milk 1/2 cup chopped Green Chili i/2 Small onion chopped Salt and Pepper /2 cup american cheese grated or 1 can of whole Kernel Corn melt. Pour filling Over them. Bake in pre heated 350 degree f oven for 50-60 minutes until Center of pie. Is almost set but still soft. Do not Over bake for filling will set As it cools. Cool on wire rack at least one hour before cutting
