I studied the recipe and since i also had some Cream cheese that was threatening to turn Green any Day it seemed the perfect solution. To be Able to use two things out of the refrigerator on one cleanup Day is truly a remarkable feat. With the Aid of a food processor or mixer a cheesecake takes Little people time although Long cooking time. But it is one of those things that likes to be made ahead and freezes Well As a Rule. This cake was no exception although the recipe did have a Stern injunction to let it sit for two Days before cutting. We left notes All Over the refrigerator saying do not Cut until sunday As it will not be Good and Drew a Poison sign for anyone who might peer inside in Hopes of a Good treat. In fact it was a perfectly wonderful cheesecake better because of the candied fruit but really Good All year around. The fruit could even be left out. This was no Surprise to me because Betty Rosbottom has Long been known for running one of the Best cooking schools in the United states and is a member of the International association of cooking professionals. She also had a peach cheesecake in her Book which i loved and it so tantalized me that i went out and bought Frozen peaches. The problem is that i wound up with More Cream cheese left Over and the first cheesecake was so Good i went out and bought the last of the candied fruit at the grocery store. Peaches and Cream cheesecake crust 1 cup Graham Cracker crumbs 4 Tablespoons unsalted butter melted filling 1 Jar 10 ounces peach preserves 1 Teaspoon grated Lemon zest 2 Tablespoons peach Brandy optional 11/z pounds Cream cheese at room temperature 3/4 cup sugar 1 Tablespoon All purpose flour 2 Large whole eggs 2 Large egg Yolks % cup sour Cream Garnish % cup heavy or whipping Cream whipped 1 Pound peaches sliced 2 Teaspoons fresh Lemon juice 2 Tablespoons confectioners sugar rep Are the crust place the Graham Cracker crumbs in the Bottom of an 81/2-Inch Spring form pan. Pour in the melted butter and mix Well with a Fork until the crumbs Are thoroughly moistened. Pack the crumbs evenly on the Bottom of the pan. Position a rack in the Center of the oven and preheat the oven to 375 f. Prepare the filling melt together the peach preserves Lemon zest and peach Brandy. Beat the Cream cheese in a Large bowl until Fluffy. Gradually add the sugar and the flour the sour Cream and the peach mixture. Beat together the whole eggs and the Yolks add the eggs and beat just until Well incorporated. Pour the filling into the prepared pan and bake for 40 minutes. Turn the oven off and leave the cheesecake in the oven with the door shut for an additional 30 minutes. Remove the cheesecake let it Cool to room temperature and then refrigerate it overnight. When you Are ready to serve remove the rim from the pan. Garnish with whipped Cream and peaches tossed with Lemon juice Ana sugar serves 10.
