One hour before serving add the remaining onions carrots potatoes and tomatoes with their juice making sure they Are covered with the liquid. Cover and continue cooking until vegetables Are nearly done about a half hour. Remove the Lamb from the pan add the rest of the herbs. Boil Down the juices and the vegetables until the sauce is thick enough to serve like a Nice soup about is minutes. Taste for seasonings. Add Salt and Pepper. Slice the Lamb and serve it in a big bowl with the vegetables and sauce surrounding the meat. This dish freezes and repeats Well. Serves 8 to 10.
