Jalapa to Corn dogs 1 cup yellow Cornmeal 1/2 cup All purpose flour Ivi Teaspoons baking powder /2 Teaspoon Salt 2 Tablespoons solid vegetable shortening Vij cup milk 1egg 10 canned whole Jalapenos one 10-Ouncc can 1 cup firmly packed finely shredded Cheddar cheese 4 cups vegetable Oil for deep frying in a medium size bowl mix together the Cornmeal flour baking powder and Salt. Using a Fork Cut the solid vegetable shortening into the dry ingredients until the mixture resembles coarse breadcrumbs. In a measuring cup gently stir together the milk and egg then add this mixture to the Cornmeal mixture. Stir with a Fork to Combine Well and produce a soft dough. Put the Cornmeal dough into refrigerator to chill while you prepare the other ingredients. Rinse off the Jalapenos and Pat them dry with a paper Towel. Cut off the Stem end of each Jalapeno just where the Stem attaches to the Pepper. Use the handle of a Small spoon to scoop out All the seeds and veins from the Pepper cavity be careful nol to break open the Popper discard the seeds and veins. the dry again and stuff h one with shredded cheese. Like your Little Finger or Blunt end of a c lips tit k to press the cheese Down into the cavity of each Pepper. Fill the Jalapenos As full of cheese As you possibly can without causing them to split open. Set the stuffed Jalapenos aside on a paper Towel remove the Cornmeal dough from the refrigerator. Pinch off a piece about the size of a Golf Ball and flatten it Between your Palms into an v Inch thick Patty. Place one Jalapeno in the Center of the Cornmeal Patty and wrap the dough around the Pepper. Use your fingers to press the dough into place so that it entirely and evenly covers the Jalapeno. Then Roll the whole thing Between your Palms to form a smooth outer surface of dough. Heat 4 cups of vegetable Oil in a deep Fryer deep Skillet or wok. When the Oil is very hot Fry the Jalapeno Corn dogs in it 3 or 4 at a time for Only 1 v to 2 minutes or until they arc evenly Golden Brown. Remove with a slotted spoon and set aside to Drain on paper towels. Serve hot accompanied by cold Beer or iced Tea. Makes 10 Jalapeno Corn dogs. These can be prepared ahead of time then re heated wrapped in aluminium foil in a 400 degrees f. Oven for about 10 minutes stuffed Jalapenos make the filling of your Choice recipes follow and let it be chilling in the refrigerator while you prepare the Jalapenos. Take 1 Teaspoon to 1 Tablespoon of chilled filling depending on the size of the Jalapeno and use your fingers to press the filling into the cavity of the Pepper. Stuff the Pepper with enough filling to open up the Pepper along the Cut Side so the filling shows. Sprinkle mild paprika Over the filling for decoration if desired. Use a Damp paper Towel to wipe off any filling smeared inevitably on the outside of the Pepper. Arrange the stuffed peppers on a serving Platter cover and refrigerate until serving time. Add one or More of the following you can mix Antl match flavors As desired4 cup finely chopped onion or chives � cup finely chopped Iresh Parsley a cup finely chopped pimiento 4 cup finely chopped pecans /4 to cup finely grated Cheddar cheese 2 Tablespoons ground cumin. Mix thoroughly. Cover and Chili for at least 30 minutes before using. Tuna filling Combine in a food processor or blender and process to a thick paste one 7-ounce can of tuna Well drained2 Tablespoons Mayonnaise and a cup finely chopped onion. Chill at least 30 minutes before using. Garbanzo filling Combine in a food processor or blender and process to a thick paste 2 cups cooked drained Garbanzos one 15-Ouncc can drained cup Ricotta cheese or dry curd cottage Cheesea cup finely chopped or ground pecans 2 Large cloves of garlic and 1 Tablespoon Lemon juice. Chill at least 30 minutes before using. Jalapeno cheese Sandwich spread 1 Pound mild Cheddar cheese 3 to 4 Jalapenos fresh or canned 1 Small onion optional v 4 cup Mayonnaise shred the cheese finely chop the Jalapenos and the onion. Combine All the ingredients in a medium size bowl. Use a spread for sandwiches it s especially Good on homemade whole wheat bread. Makes approximately 3 cups. Note this spread can be made easily in a Tood processor by putting the cheese cube whole Jalapenos and onion quartet into the Container and processing with the c lilting bladed until All the ingredients Are finely chopped. Then stir in the Mayonnaise. Final note most cookbooks Tell you to Wear rubber gloves while handling hot peppers hut i find rubber gloves to be an unnecessary encumbrance. Hot peppers won t Burn your hands unless you have a rut or a Hangnail. The problem comes when you tone h your eyes or other sensitive areas with hands that have been touching peppers. The Best solution is merely to be careful and always chop your onions before you handle any hot peppers. We gel a budget in our Community of $45 a month maximum which we use to buy postage full onery clothing cosmetics Etc. All the rest of our earnings Are turned into the general Community fund. I Only had $3 for an $8 dinner the cheapest thing on the menu of the restaurant they chose. I would appreciate it if you would Tell me what i could say to avoid this predicament.
