Vegetable soup with Turkey and coriander 2 Tablespoons butter 1 Tablespoon Curry powder optional 1 cup chopped onions 4 Leeks about 1 Pound cleaned and Cut into a Inch cubes about 3 cups 3 carrots about i Pound scraped and Cut into /4-Inch cubes about 1 i cups 1 Parsnip about v Pound peeled and Cut into i Inch cubes 3 potatoes about 1 Pound peeled and Cut into /4-Inch cubes about 2 cups Salt and freshly ground Pepper to taste 4 cups fresh or canned Chicken Stock 4 cups water 1 Boneless skinless Turkey breast about 1 Pound Cut into /2-Inch cubes 3 Tablespoons chopped fresh coriander leaves. Heal butter in a Saucepan and add Curry powder if desired onions Leeks carrots Parsnip and pol foes. Cook stirring until they Are willed about 5 minutes. Add Salt Pepper Chicken Stock and water. Bring to a boil and simmer for 30 minutes. Add Turkey breast cubes and Cook 10 minutes. Garnish each serving Wilh coriander. Yield 8 Servings. Carrot soup with Dill 2 Tablespoons butter3 /4 cup finely chopped onions 11/2 pounds carrots scraped and sliced about 4 cups 4 cups fresh or canned Chicken Stock Salt and freshly ground Pepper to taste 2 cups water i cup Ricotta cheese 3 Tablespoons port wine 2 Tablespoons chopped fresh Dill. Heal butter in a Saucepan and add onions. Cook stirring until they Are wilted. Add carrots Stock Salt Pepper and water. Bring to a boil and simmer Lor 20 minutes. Strain Over a Saucepan to Reserve the cooking liquid. Puree the solids in a food processor or food Mill along with the cheese and 1 cup of the reserved cooking liquid. Transfer the Puree to the Saucepan with the remaining cooking liquid. Blend Well. Bring soup to a boil and add wine and Dill. Serve hot or cold. Yield 6 Servings.
