For Hobb Cooks and Farmers alike it s time to Star thinking about planting. The fresh herbs you Plant now could improve the taste of you meals for an entire year. Most herbs can be grown from seeds. If space is a limitation you could grow the herbs in pots on the Patio or in widow boxes. If you Plant perennials in pots you can bring them inside in the fall beautify your Home in the process and have them available fresh throughout the Winter. Most annuals can be harvested and if dried properly will retain their flavors Well some of the herbs you might think of planting Are Basil Oci mum Basil icum in French it is called the Royal Herb. Its leaves can be used fresh or dried for spicing Tomato dishes soups salads and sauces As Wellas for Lamb and pork stews. It is indispensable for italian cooking. If you make pesto an italian sauce you must use fresh Basil. Although the leaves turn Brown easily they May still be used. Borage Borago Officina Lis the name comes from the latin Borra which Means scruffy Beard presumably because the leaves Are hairy and resemble an unkempt Beard. This Herb can Only be used fresh and it is never cooked with food. Rather it is added just before serving. It tastes like cucumbers so it can be used whenever you want a Cucumber taste especially in salads sauces Mayonnaise and Herb butter. It is used in Folk Medicine for the heart nerves and rheumatism. Chervil ant Riscus cer Folium it is similar in taste and appearance to Parsley but considered to be finer. The leaves Are used fresh As a spice and As a Garnish for fish potatoes soups Chicken veal Herb butter and eggs. It loses its flavor when dried. Chives a hum Schoenow Pratum if you Start growing chives you can have them fresh year around. To use Cut off a few shoots an Inch or two above the Earth and chop them. This is better than snipping off the tops which causes the tips to turn Brown. Keep a few plants going and Cut from each so none gets Cut too often. Chives Are excellent in eggs soups salads Mayonnaise sauces and do Well As a Garnish too. Dill Anath Tum grave Lens you la need a Garden plot to grow this one As it does t take Well to pots. It has been cultivated in Europe for centuries. It is used As a Folk remedy for sleeplessness nightmares and headaches. It is often used in Green salads Cucumber salads and Tomato salads. It is a Good Herb for sauces to go with eel shrimp Salmon other fish and some fowl. Add the Dill just a few minutes before serving or it will lose its taste. I fennel Foen Culum vulgar fennel has a Licorie like taste. Its Oil is used to treat stomach and intestinal problems. In the Kitchen it is a Flavouring for breads cakes puddings and candies. It can also be added to fruit compotes and Light sauces. The greens can be put inside fish before grilling. It can be eaten raw or cooked As a vegetable. Fennel will grow Only in a Garden.
