They weigh Only about a Pound each so they Cook relatively quickly. And they have firmer moister flesh than chickens so they Don t dry out As quickly. Originally an american hybrid the Cornish Hen is a Cross Between an american fowl the Plymouth Rock Hen and a Cornish or Bantam rooster. At one time it was called the Cornish game Hen but because it is not really game in flavor the name has been changed. In this recipe the heps should be split and seasoned. To make the Birds lie Flat on the Barbecue Grill or under the broiler snap the legs at the Center joint. This is Best done with the Back of a Cleaver or a meat Pounder. The hens Are then brushed with an aromatic mixture of Ginger Mustard cumin garlic Lemon juice and Olive Oil. You May want to add fresh herbs of your Choice. Let the hens marinate for three or four hours. Remember to Baste them with the marinade while they Are cooking to keep them moist a sprightly accompaniment is broiled fennel and Zucchini dusted with Parmesan cheese. The fennel bulb can be cult no half Inch slices for broiling. I season the fennel and the Zucchini with Salt and Pepper Brush them with Oil and Broil them. When they Are done i dust them with the Parmesan cheese and return them to the boiler just to Brown. Barbecued Cornish hens 4 Cornish hens each about 1 Pound split in half for broiling s4s Wes Booher Salt and freshly ground Pepper to taste 2 Tablespoons fresh Ginger chopped Fine 2 Tablespoons Dijon style Mustard 1/4 Teaspoon ground cumin 1 Tablespoon garlic chopped Fine 2 Tablespoons fresh Lemon juice 3 Tablespoons Olive Oil 4 Tablespoons chopped fresh coriander leaves Sprinkle the hens with Salt and Pepper and put them in a baking dish Large enough to hold the hens in one layer. Blend the Ginger Mustard cumin garlic Lemon juice and Oil with a wire whisk. Brush both sides of the hens with this mixture cover them with plastic wrap and. Marinate 3 to 4 hours in the refrigerator. Preheat the broiler to the Hen halves on a broiler pan that has High sides. They should be skin Side up and should be placed about 6 inches from the source of heat. Cook until the skin is nicely browned about 10 minutes. Turn the hens and continue cooking Baste them and continue turning and Basting every 5 minutes until they Are done about 15 minutes. Serve with coriander sprinkled Over All. Yield 4 Servings. Broiled fennel and Zucchini with Parmesan cheese 1 Large unblemished fennel bulb about 1 Pound 2 Zucchini about to amp Pound Salt and freshly ground Pepper to taste 2 Tablespoons Olive Oil 1/< cup freshly grated Parmesan cheese 2 Tablespoons Parsley chopped Fine. Preheat the broiler to High. Trim the fennel keeping the bulb intact. Cut the bulb Lengthwise into slices Vamp Inch thick. A trim the Zucchini but do not Peel them. Split them in half Lengthwise. Put the Zucchini and fennel in one layer in a baking dish. Sprinkle them with Salt and Pepper and Brush the tops with Oil. Put them under the broiler about 6 inches from the source of heat leaving the door partly open. Broil 5 minutes turn and Broil 3 minutes More. Sprinkle the vegetables with cheese. Return to the broiler and Broil until nicely browned. Sprinkle with Parsley and serve. Yield 4 Servings.
